A warm roast tomato, rosemary and garlic salsa is a rich, sweet twist on the classic tomato salsa. Fresh herbs and a zing of lemon zest add their bright, refreshing flavours to this hearty, satisfying one-pot stew of organic courgettes and aubergines, whose silky texture melts into the tender red lentils for extra creaminess. Aubergines get a real roasting, till golden and soft and ready to be rolled in toasty sesame seeds for a bit of crunch. Tossed though a salad of buckwheat, peppery leaves and crumbles of feta, drizzled in a gorgeous orange and date dressing.
